If you want to make it thick enough to be used as a sandwich spread, you can substitute Lebna for the yogurt. This will also make the flavor slightly more tangy as well.
Ingredients:
- 1 cup of plain yogurt. If you want the dip to be thicker for a sandwich spread substitute Lebna.
- 1 small cucumber
- 1 teaspoon garlic, chopped
- 1/2 teaspoon dry mint
- 1 shake of salt
Directions:
- Peel the cucumber.
- Make a criss-cross pattern on the cucumber with a knife.
- Use a vegetable peeler to slice the cucumber into a bowl. The criss-cross pattern will make the chunks small.
- salt the cucumbers, add the mint and garlic. Mix thoroughly.
- Add the yogurt, mix thoroughly.
- Let stand at room temperature for 30 minutes, or let stand in the fridge for up to 2 days.
- Serve with your favorite foods or just enjoy crispy bread or chips.
